Valentina Mussi’s dreamy Unicorn Fudge

Valentina Mussi from @sweetportfolio has garnered 500,000 followers on Instagram and another 1.2 million on TikTok for her incredibly sweet food and easy-to-follow recipes. One of the influencers’ favorite food trends is Unicorn Food, and this fudge is a perfectly dreamy example.

The recipe from Mussi’s new cookbook “The Unofficial TikTok Cookbook: 75 Internet Breaking Recipes for Snacks, Drinks, Treats and More! (Adams Media, $ 18) calls for white chocolate chips, rainbow sprinkles, and pink, purple, and blue food coloring. The fudge comes together in the microwave instead of on the stove.

Unicorn fudge

Servings 8

ingredients

1¼ cups of white chocolate chips

14-ounce can of sweetened condensed milk

1 teaspoon vanilla extract

1 tablespoon unsalted butter, melted

1/4 teaspoon salt

6 drops each of pink, blue and purple food coloring

3 tablespoons of rainbow sprinkles

Directions

Add chocolate chips to a large microwaveable bowl and turn the microwave on for 30 seconds. Stir and microwave for another 30 seconds. Repeat cooking and stirring until completely melted.

Put the condensed milk, vanilla, butter, and salt in a bowl and stir until well mixed. Divide the mixture into three small bowls.

Add 6 drops of food coloring to each bowl and stir with different spoons to keep the colors from mixing. Line an 8-inch square baking pan with plastic wrap or aluminum foil.

Add 2 tablespoons of each colored batter to the pan until all of the batter is used up. Swirl the top with a toothpick or knife. Scatter sprinkles on top.

Pack in plastic wrap and put in a cool place for at least 4 hours. As soon as it is set, take it out of the pan and carefully peel off the plastic wrap / foil. Cut into 1-inch squares with a knife. Fudge can be kept covered in the refrigerator for up to 3 days.
