Roasted Brussels Sprouts on a Stick Recipe:

Ingredients:

  • 1 stem of Brussels sprouts (approximately 18 to 24 inches long)
  • 1/4 cup olive oil (not extra virgin)
  • Salt, black pepper and garlic powder to taste

Method:

Preheat your oven to 400 degrees. Rinse and blot your sprout stem carefully. Cut off any loose leaves or blemishes. Avoid cutting off whole sprouts if possible; the beauty lies in the presentation of this recipe.

Using a frying brush or oil sprayer, brush the entire stem with olive oil and sprinkle with salt, freshly ground black pepper, and garlic powder. Place on a baking sheet lined with foil and roast for 30 to 40 minutes (depending on the size of the sprouts) until the outer leaves appear brown and slightly charred. Serve whole with a paring knife and dipping sauces.

Variations:

  • While you can use ground pepper, freshly ground black pepper gives the dish a nice, rustic look. Also try sprinkling some sea salt flakes on top just before serving.
  • Have different dip options ready: Caesar dressing, garlic aioli, or a simple balsamic vinaigrette would be great.
  • If you need to cut the stem to match your baking sheet, cut off the bottom portion and cut the larger sprouts in half. Fry them next to the whole stem, cut side down.
  • Since you’re frying over high heat, you’ll be using “regular” olive oil or vegetable oil in this recipe.
